A Fort Worth-brewed adult beverage — exported to Dallas for the State Fair of Texas — is turning heads for its vibrant color.

The limited-time, bright yellow mustard beer concoction is the result of a collaboration between two Fort Worth businesses, Martin House Brewing Co. and Best Maid Pickles, with Fletcher’s Original Corny Dogs, the State Fair’s longtime vendor.

The beer is available at the fair and Martin House until it is sold out.

Senior business reporter Eric Garcia spoke to Martin House Brand Manager Sam “Shugg” Cole about the brewery’s mustard beer.

Eric Garcia: What is the inspiration behind mustard beer?

Shugg Cole: We teamed up with Fletcher’s a couple years ago for our first Glizzy Fest, which is a celebration of corny dogs and hot dogs here at Martin House. They were an awesome vendor, and we invited them to come back and sponsor Glizzy Fest. That’s what they’ve done the last two years. Since they were going to be the sponsor, we had to do it right and collab on a beer, and what pairs better with corny dogs than mustard. Thus, the mustard beer was born. 

Garcia: How long will mustard beer be on sale at Martin House?

Cole: Mustard beer is available in very limited quantities at Martin House at the moment. You’ll be able to find it on draft at three Fletcher’s locations at the State Fair.

Garcia: How do you make the beer so yellow?

Cole: We add 1 gallon of mustard for every 12 gallons of beer in the brew. That’s what gives it the distinct flavor, aroma and appearance.

Garcia: In addition to corny dogs, what other foods pair well with your mustard beer?

Cole: What pairs well with mustard beer? Uhm, I’d say anything you enjoy with mustard. A nice cheeseburger. Some tater tots or french fries would probably be good. 

Garcia: I understand the base of mustard beer is the brewery’s popular Best Maid Sour Pickle Beer. Can you tell me about that?

Cole: The base of the mustard beer is indeed the Best Maid pickle beer. The sourness and vinegar bite from the brine really compliment and help the mustard flavor pop.

Garcia: Are there more specialty beers that Martin House plans to produce?

Cole: We have made close to 1,000 beers. … I can tell you nothing is off limits, and if you see a Martin House beer, you can bet it’s going to taste like what it says on the can. That’s the Martin House promise.
